
1 tsp ground cumin
1 tsp chilli powder
1 tbsp finely chopped ginger
4 garlic cloves (crushed)
2 green chillies (deseeded and finely chopped)
2 red onions (diced)
1 whole cauliflower (including stem and leaves, chopped into bite-sized pieces)
2 large tomatoes (cut into wedges)
250ml coconut milk
1 lime (juiced)
If you have a large cauliflower, we recommend upping the spice quantities
If you're out of tomatoes, chopped tomatoes are a nice substitution, and make for a 'saucier' curry
We like to use a full tin of coconut milk, again for a saucier result!
